Cupcake Heaven!!!
Let's face it....I don't bake! The closest I get to "baking" is slappin' on Pillsbury Ready-to-bake cookies in the cookie pan and saying to my girls "Look what mommy made for you!" It's too time consuming, too many ingredients and I just don't enjoy it -- much to my mother's dismay -- a born baker. However, I do enjoy eating baked goods -- probably more then I should!
Anyway, when I read Staci Edwards tweet from Staci Edwards Design about a "blog & bake", I just couldn't resist. It was a challenge, and although I didn't like baking I had one massive weapon on my side: I can READ!! So all I had to do was choose whatever cupcake recipe I wanted and just read the instructions....how hard can that be!
We were told to choose a cupcake flavour from Ming Makes Cupcakes and I chose #24 "Coffee Chocolate Cupcakes with Baileys Irish Creme Frosting." I couldn't find one with any wine ingredients so I chose the next best thing: Baileys!!! If I was going to bake it then I better love it!!! So here's my harrowing story of my baking adventure yesterday afternoon!!

OMG!! I can't believe I just mixed together a bunch of ingredients and this is what I came up with! It actually looks good!!!

OK....batter is done....now what??? Oh yes, carefully pour it into the cupcake baking dish. Ok, Christine we can do this -- the hard part is over!!

OMG!!! I did it! And I didn't even burn them (lots of patting on the back was happening at this moment - even though I was all by myself with the music blaring in the background!)

All rightee then!! Time to tackle part 2 of this baking exercise and the best part!!! The ICING!!!! But seriously, 4 cups of icing sugar....(cavity alert!!!!)

Wow...it's done and its soooo yummy! Better get my trusted assistant Mackenzie to help out decorating these cupcakes....with one BIG caveat: No tasting the frosting....it's for adults ONLY!!!

I had soooo much fun yesterday....thanks to Staci and Ming Makes Cupcakes!!!! Will I try this whole baking thingy again........why I think YES!!!!!! xoxo

Your post is so cute! I totally know how you feel. I don’t bake that much because nothing ever turns out it seems. I blame the oven. haha. Your cupcakes look so good. Glad you had fun!
